Ayam Richeese Fire Wings with Cheese Sauce
Ingredients:
For the Chicken Wings:
- 1/2 kg chicken wings
- 1 packet of seasoned flour (e.g., Sasa brand)
For the Spicy Sauce:
- 3 cloves garlic, crushed
- 4 tablespoons chili sauce
- 2 tablespoons tomato ketchup
- 4 tablespoons barbecue sauce (optional, omit if not using)
- 1 teaspoon sesame oil (optional)
- 1 tablespoon oyster sauce
- 1 tablespoon honey (or substitute with sugar)
- 1/2 teaspoon salt (or to taste)
- 1 tablespoon Bon Cabe (level 30, adjust to your heat preference)
For the Cheese Sauce:
- 100 ml UHT milk (or reconstituted powdered milk)
- Grated cheddar cheese, as needed
- 1 sachet of Indofood cheese powder (typically used for french fries)
- 1 teaspoon cornstarch dissolved in a little water
- 1 tablespoon margarine

Prepare the Chicken Wings:
- Clean the chicken wings thoroughly and cut them into two pieces each.
- Coat the chicken wings with the seasoned flour according to the package instructions.
- Heat oil in a deep fryer or skillet, and fry the chicken wings until they are crispy and golden brown. Remove and drain on paper towels.

Make the Spicy Sauce:
- In a pan, heat margarine and sauté the crushed garlic until fragrant.
- Add chili sauce, tomato ketchup, oyster sauce, salt, and honey to the pan. Stir well.
- If using, add barbecue sauce and sesame oil. Adjust the spiciness with Bon Cabe according to your taste.
- Simmer the sauce until it thickens. Taste and adjust seasoning as needed.

Combine Chicken with Spicy Sauce:
- Add the fried chicken wings to the pan with the spicy sauce. Toss to coat the wings evenly in the sauce.

Prepare the Cheese Sauce:
- In a saucepan, melt margarine over low heat.
- Slowly add the UHT milk (or reconstituted powdered milk) while stirring.
- Incorporate the grated cheddar cheese and continue to stir until melted and smooth.
- Add the Indofood cheese powder for added flavor and brightness.
- Stir in the cornstarch mixture and cook until the sauce thickens and becomes bubbly.

- Serve the spicy chicken wings hot, topped with the creamy cheese sauce.
- Garnish with toasted sesame seeds if desired.
