Ingredients:
- 2 tomatoes, finely chopped
- 1 onion, thinly sliced
- 2 cups cooked rice
- 1 tsp red chili powder
- 1 green chili, sliced lengthwise
- A few mint leaves, chopped
- A few coriander leaves, finely chopped
- 1 cinnamon stick
- 2 cloves
- 1 sprig curry leaves
- 1 tbsp ghee
- Salt, to taste
For grinding:
- 1-inch piece ginger, chopped
- 3 cloves garlic
- 1 tsp fennel seeds
Preparation Time: 5 minutes
Cooking Time: 15 minutes
Instructions:
- Begin by cooking the rice well and setting it aside.
- In a mortar and pestle, grind the ginger, garlic, and fennel seeds to a coarse paste. Set it aside.
- Heat ghee in a pan over medium heat. Add the cinnamon stick and cloves, cooking for about 10 seconds until aromatic.
- Add the ground ginger, garlic, and fennel mixture, then sauté for 3 minutes.
- Add the curry leaves and sliced onions to the pan, cooking until the onions soften and become translucent.
- Once the onions have softened, add the chopped tomatoes and cook until they are half-cooked, about 5 minutes.
- Stir in the green chilies, red chili powder, chopped mint, coriander leaves, and salt. Cook for another 10 minutes, or until the tomatoes are fully cooked.
- Add the cooked rice to the pan, mixing thoroughly with the tomato-spice mixture. Let it cook for an additional 5 minutes to allow the flavors to meld together.
- Once done, remove from heat and serve.
