Ingredients:
- 80g unsalted butter
- 1/3 cup brown sugar
- 1 fresh lemon rind, grated
- 1 cup plain flour
- 3/4 cup cornflour
- 2 eggs, separated
- 3/4 cup caster sugar
- 1/4 cup jam (any flavor)
- 1/2 cup desiccated coconut
- 1 1/2 cups shredded coconut
