Instructions

Step Method
1 Wash the chow chow (chayote squash), peel the skin, and chop it into small pieces. Set aside.
2 Heat 2 teaspoons of oil in a pan or kadai over medium heat.
3 Add the urad dal and chana dal to the pan. Roast them until golden and aromatic.
4 Toss in the dried red chilies and sauté for another 20 seconds until they release their fragrance.
5 Add the chopped chow chow to the pan and cook until it turns soft and tender.
6 Stir in the tamarind and cook for 2 minutes. Turn off the heat and allow the mixture to cool.
7 Once cooled, transfer the mixture to a blender. Add the fresh coriander leaves and salt.
8 Blend everything into a smooth paste, adding a little water if required, to achieve the desired consistency.
9 For added flavor, temper the chutney with mustard seeds, urad dal, and curry leaves in a teaspoon of hot oil. Pour the tempering over the chutney.
