Ingredients
- 2 cups basmati rice
- 1/4 cup channa dal (split chickpeas)
- 1/4 cup masoor dal (split red lentils)
- 1 onion, finely chopped
- 2 lemons
- 25g butter
- 1 tsp mustard seeds
- 1 tsp cumin seeds
- 1/2 tsp turmeric powder
- 2 bay leaves
- 2 cloves
- 2 cinnamon sticks
- 3-4 curry leaves
- 4-5 cashew nuts
- 1 sprig of fresh coriander
- 1 tsp dried parsley
- Fresh lemon rind
- Salt to taste
Instructions

Prepare Dals:
- Soak channa dal and masoor dal in water for a few hours before cooking.
- Boil the soaked dals in water until they soften. Drain and set aside.

Cook Basmati Rice:
- Rinse basmati rice thoroughly and boil with 4-5 cups of water and salt until the grains are tender yet firm.
- Just before draining, add turmeric powder to the rice and stir to evenly distribute. Drain and keep aside.

Prepare Seasoning:
- In a small saucepan, melt butter over low heat.
- Add mustard seeds, cumin seeds, bay leaves, cloves, cinnamon sticks, curry leaves, and cashew nuts.
- Sauté until the seeds start to splutter and the nuts turn golden brown.
- Add chopped onions and sauté until translucent.
