Ingredients:

  • 2 halibut steaks
  • 2 tbsp butter
  • 1 onion, finely chopped
  • 4 garlic cloves, minced

Instructions:

OVEN COOKING:

  1. Rinse halibut in cold water and pat dry with paper towels.
  2. Arrange halibut in a 9″ x 13″ oven-proof baking dish.
  3. Preheat the oven to 400 degrees Fahrenheit.
  4. In a frying pan, melt butter, add onion and garlic. Saute until translucent.
  5. Remove from heat; stir in parsley, orange zest, salt, and black pepper.
  6. Spread the mixture over halibut steaks.
  7. In a small bowl, combine orange juice and lemon juice.
  8. Sprinkle the juice over the steaks, being careful not to wash away the onion/garlic mixture.
  9. Bake fish in the preheated 400-degree Fahrenheit oven for 20 to 22 minutes, turning over at about 10 minutes of cooking time.
  10. Continue cooking until the time expires or until the fish flakes easily with a fork. DO NOT OVERCOOK FISH.
  11. Spoon the hot citrus-infused juices over the fish.

MICROWAVE COOKING:

  1. Prepare and arrange fish and onion/garlic as above.
  2. Reduce orange juice by 2 tablespoons.
  3. Cover fish with clear plastic wrap vented for steam.
  4. Cook on HIGH (full power) for 4 minutes.
  5. Turn fish over and cook for an additional 3 to 4 minutes on HIGH (full power) or until fish flakes easily with a fork.
  6. Spoon the aromatic juices over the fish and serve immediately.
