Instructions:

  1. Preheat oven to 400Β°F (200Β°C).

  2. Prepare Aromatics: In a skillet, heat olive oil over medium heat. Add minced garlic and chopped chives, and cook for 2-3 minutes until fragrant.

  3. Prepare Fruit Juice Mixture: To the skillet, add fresh lemon juice. Increase the heat to high, bring it to a boil; cook for 1-2 minutes to reduce slightly. Then, add fat-free chicken broth, heat through, and remove from heat.

  4. Prepare Chicken: Cut 2 thin slices of orange and lemon. Cut each slice in half. Gently loosen the skin of the chicken breast and season the meat with salt. Place one slice of orange and one slice of lemon under the skin of each chicken breast.

  5. Bake Chicken: Place the seasoned chicken breasts in an oven-proof baking pan. Pour the heated fruit juice mixture over the chicken. Bake in the preheated oven at 400Β°F (200Β°C) for 20-25 minutes or until the chicken is cooked through and juices run clear.

  6. Make Sauce: Remove the chicken from the pan and set aside. Skim any excess fat from the pan juices. In a small bowl, prepare a slurry by mixing cornstarch with water. Pour the slurry into the pan juices and heat over medium heat until the sauce thickens and becomes bubbly.

  7. Serve: Pour the thickened sauce over the cooked chicken breasts. Garnish with freshly chopped parsley.

This Golden Chicken I recipe offers a delightful blend of citrus flavors and tender chicken, making it a perfect choice for a quick and impressive dinner option, especially when paired with wild rice or your favorite side dish. Enjoy! 🍽️
