Special Chicken Porridge with Egg
Ingredients:
- 1/2 kg Chicken
- 1/2 kg Rice
- 4 cups Chicken Broth
- Coconut Milk (from half a coconut)
- Salt
- 2 Bay Leaves
- 2 Pandan Leaves
- Eggs
Instructions:
1. Prepare the Chicken Broth:
- In a large pot, bring the water to a boil. Add the chicken and cook until fully cooked.
2. Cooking the Porridge:
- Pour approximately 4 cups of the prepared chicken broth into a separate pot.
- Add the rice, shredded chicken, bay leaves, pandan leaves, and salt.
- Stir continuously until the rice becomes soft and porridge-like in consistency.
3. Adding Coconut Milk:
- Once the porridge reaches the desired consistency, pour in the coconut milk.
- Stir well until the porridge thickens to your liking. Adjust thickness as needed.
4. Serving:
- Once the porridge has thickened to your preference, remove from heat.
- Serve hot and garnish with boiled eggs.
