Special Chicken Porridge with Egg

Ingredients:

  • 1/2 kg Chicken
  • 1/2 kg Rice
  • 4 cups Chicken Broth
  • Coconut Milk (from half a coconut)
  • Salt
  • 2 Bay Leaves
  • 2 Pandan Leaves
  • Eggs

Instructions:

1. Prepare the Chicken Broth:

  • In a large pot, bring the water to a boil. Add the chicken and cook until fully cooked.

2. Cooking the Porridge:

  • Pour approximately 4 cups of the prepared chicken broth into a separate pot.
  • Add the rice, shredded chicken, bay leaves, pandan leaves, and salt.
  • Stir continuously until the rice becomes soft and porridge-like in consistency.

3. Adding Coconut Milk:

  • Once the porridge reaches the desired consistency, pour in the coconut milk.
  • Stir well until the porridge thickens to your liking. Adjust thickness as needed.

4. Serving:

  • Once the porridge has thickened to your preference, remove from heat.
  • Serve hot and garnish with boiled eggs.
