Mrs. Fields Coconut Mud Bars Recipe

🕒 Total Time: 25 minutes
🥄 Yield: 24 bars

Ingredients:

  • 1 1/3 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • Pinch of salt
  • 1 cup dark brown sugar
  • 1/2 cup unsalted butter, plus extra for greasing
  • 10 ounces chopped chocolate
  • 3/4 cup heavy cream
  • 1/4 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 2 cups flaked coconut
  • 1 1/2 cups chopped pecans

Instructions:

  1. Preheat Oven: Preheat your oven to 350°F (175°C).

  2. Prepare Baking Pan: Lightly butter a 9×13-inch baking pan.

  3. Make Bottom Layer: In a mixing bowl, combine 1 1/3 cups of all-purpose flour, 1/2 teaspoon of baking powder, a pinch of salt, and the dark brown sugar.

  4. Add Butter: Using a pastry blender, cut in the 1/2 cup of butter (cut into small pieces) until the mixture becomes crumbly and coarse.

  5. Press into Pan: Press the mixture evenly into the bottom of the prepared baking pan.

  6. Bake Bottom Layer: Place the pan in the preheated oven and bake for 10 minutes. Once baked, remove the pan from the oven and set it on a cooling rack.

  7. Prepare Chocolate Ganache: In a medium bowl, place the chopped chocolate. In a small saucepan, bring the heavy cream to a simmer. Pour the hot cream over the chopped chocolate and let it sit for 5 minutes. After 5 minutes, stir until smooth. Place the ganache in the refrigerator to set for about 15 minutes.

  8. Make Topping: In another bowl, cream the remaining 1/4 cup of softened butter. Add the granulated sugar and vanilla extract, and beat until well blended. Then, beat in the eggs. Stir in the flaked coconut and chopped pecans.

  9. Layer Topping: Drop spoonfuls of the topping mixture evenly over the set ganache layer in the baking pan. Use a spatula or knife to spread it evenly.

  10. Bake: Place the pan back in the oven and bake at 350°F (175°C) for 25-30 minutes, or until the top is golden brown.

  11. Cool and Serve: Once baked, remove the pan from the oven and set it on a cooling rack. Allow the bars to cool completely in the pan before cutting them into squares.

These Mrs. Fields Coconut Mud Bars are a delightful treat, perfect for any occasion. The combination of rich chocolate ganache, sweet coconut, and crunchy pecans creates a flavor and texture sensation that is sure to impress. Enjoy them with a glass of milk or a cup of coffee for a truly indulgent experience!
