Instructions

For the crust:

  1. Preheat your oven to 325°F (163°C).
  2. Line a 13×9-inch baking pan with foil, making sure the edges hang over the sides by about an inch. This will make it easier to remove the bars after baking. Coat the foil with cooking spray to prevent sticking.
  3. In a large mixing bowl, beat the butter and sugar on high speed for about 2 minutes, or until the mixture is light and fluffy.
  4. Gradually add the flour and salt on low speed until just combined.
  5. Press the dough evenly into the prepared pan and use a fork to prick the surface lightly.
  6. Bake for 25-30 minutes, or until the crust is golden brown.

For the filling:

  1. In a separate bowl, whisk together the eggs, sugar, lemon juice, and lemon zest until well combined.
  2. Gradually whisk in the flour and baking powder, blending until smooth.
  3. Pour the filling mixture evenly over the baked crust.
  4. Bake for an additional 15 minutes, or until the filling is just set and lightly golden.
  5. Sprinkle the sweetened coconut over the top of the filling and bake for another 10 minutes, allowing the coconut to toast lightly.
  6. Remove from the oven and let the bars cool completely in the pan.
  7. Once cool, use the foil to lift the bars out of the pan, then cut them into triangles.

Serve these Coconutty Lemon Triangles as a delightful dessert or snack for your next gathering, and watch them disappear as they bring bright citrusy sweetness and coconutty goodness to the table!
