Instructions:

  1. Prepare Sprouted Lentils:

    • Begin by washing, soaking, and sprouting the green lentils at least 2 days ahead of time. This process helps enhance the nutritional value of the lentils.
    • Once sprouted, boil the lentils in just enough water with salt until they are cooked but still firm and crunchy. Set them aside for later use.
  2. Prepare Spice Paste:

    • Heat oil over low flame in a frying pan.
    • Fry the fenugreek seeds for just a minute until they turn light brown.
    • Stir in the whole red chili and then remove from the flame.
    • Pour this mixture over the grated coconut.
    • Grind the coconut along with the fenugreek seeds, chili, and tamarind to a smooth paste. This aromatic paste will be the base of your curry.
  3. Combine Ingredients:

    • In a pot, combine the ground spice paste, boiled lentils, turmeric powder, salt, and a little water. Bring the mixture to a boil and then set it aside.
  4. Season the Curry:

    • Heat oil over low flame in a separate pan.
    • Add the mustard seeds and allow them to splutter.
    • Once the mustard seeds stop spluttering, add the curry leaves and dry red chili.
