Instructions

  1. Prepare the coffee mixture: In a small bowl, combine the instant coffee with warm milk and stir until fully dissolved. Then add the ground coffee and mix thoroughly. Set aside.

  2. Separate the eggs: Crack the eggs, separating the yolks from the whites. Whisk the yolks in a bowl until smooth and creamy.

  3. Mix the dry ingredients: Gradually sift in the flour, ensuring it’s well combined with the egg yolks. Stir in the sugar, a pinch of salt, and the baking powder.

  4. Combine wet and dry ingredients: Slowly add the coffee-milk mixture to the flour mixture, whisking continuously to create a smooth, homogenous batter. If the batter feels too thick, add a little more milk to adjust the consistency to be soft but not too runny.

  5. Whisk the egg whites: Using an electric mixer, beat the egg whites to stiff peaks. Gently fold the beaten whites into the batter using a spatula, ensuring that you mix from the bottom up to keep the airiness intact.

  6. Rest the batter: Cover the batter with plastic wrap and refrigerate it for 30 minutes to allow the baking powder to activate and the flavors to meld.

  7. Cook the pancakes: Heat a non-stick skillet over medium heat and grease it with butter. Pour the batter onto the skillet, aiming to form round pancakes about 8 cm in diameter (you can make them larger or smaller depending on your preference). Cook each pancake for about 1 minute on one side, then flip it using a spatula and cook the other side until golden. Repeat the process until all the batter is used up.
