Simple Bubur Ayam: A Comforting Indonesian Rice Porridge
Ingredients
- 2 servings of freshly cooked rice (about 2 ladles)
- 1 liter water
- 200 ml chicken or beef broth
- ½ teaspoon garlic powder (or 1 clove of garlic, minced and sautéed if preferred)
- Salt to taste
- A pinch of ground black pepper
- A pinch of granulated sugar
- 3-5 green beans (or 1 carrot, diced)
- For garnishing:
- Fried shallots
- Shredded fried chicken
- Beef floss (abon)
Instructions
-
Prepare the Rice: Start with freshly cooked rice, about 2 ladles. Ensure the rice is hot and ready for the next step.
-
Prepare the Broth: In a separate pot, bring the water and chicken or beef broth to a boil. For homemade broth, simmer chicken bones or beef bones with water until the liquid reduces by half, then cool and store in the freezer for future use.
-
Season the Porridge: Add salt, ground black pepper, sugar, and garlic powder to the boiling broth. If you’re using fresh garlic, sauté it in a pan until fragrant before adding it to the broth.
-
Cook the Rice: Add the prepared rice to the seasoned broth. Reduce the heat to medium-low to maintain a gentle simmer. Cook the mixture, stirring frequently to prevent sticking and burning, until the rice is well integrated and the porridge starts to thicken.
-
Add Vegetables: Once the porridge has thickened to your desired consistency, add the diced green beans or carrot. Continue cooking until the vegetables are tender.
-
Incorporate Shredded Chicken: If your chicken broth still contains small bits of chicken, shred and mix them into the porridge.
-
Adjust the Flavor: Taste the porridge and adjust seasoning as necessary. Remove from heat once the porridge has reached the desired thickness.
-
Serve and Garnish: Ladle the hot porridge into bowls and top with fried shallots, shredded fried chicken, and beef floss (abon). For baby food versions, simply add finely chopped chicken or beef during the cooking process.
Tips
- Broth Preparation: For convenience, prepare a larger batch of broth and freeze in portions for quick use in future recipes.
- Consistency: Adjust the amount of water or broth depending on whether you prefer a thicker or more liquid porridge.
- Variations: Customize the garnishes based on your preferences or available ingredients. Try adding other vegetables or different types of protein.
Enjoy this comforting and versatile Indonesian rice porridge, perfect for any meal of the day!
