Kodava Thalia Puttu Recipe – Steamed Rice & Coconut Cake

This traditional Coorgi dish, Kodava Thalia Puttu, is a delightful steamed rice and coconut cake that’s soft, flavorful, and perfect for breakfast. The batter is made using soaked rice, fenugreek seeds, urad dal, and fermented overnight with coconut milk and sugar, creating a unique texture and taste.

Ingredients:

  • 1 cup Rice
  • 1/2 cup Cooked rice
  • 1/2 cup White Urad Dal (Split)
  • 1 teaspoon Methi Seeds (Fenugreek Seeds)
  • 1 cup Coconut milk
  • 2 teaspoons Sugar
  • 1/4 teaspoon Baking soda
  • Salt, to taste

Preparation Time: 20 minutes

Cooking Time: 15 minutes

Instructions:

  1. Soak the rice and fenugreek seeds: Start by soaking the uncooked rice and fenugreek seeds in enough water for at least 6 hours.

  2. Grind the batter: After soaking, drain the soaked rice, keeping some water aside for grinding. In a mixer, combine the soaked rice, fenugreek seeds, and urad dal with some of the soaked water. Grind into a smooth batter. Add the cooked rice to the mixture and grind again until you achieve a smooth consistency.

  3. Ferment the batter: Transfer the batter into a mixing bowl. Add the coconut milk and sugar, and mix well. Cover the bowl with a muslin cloth or plate and keep it in a warm place for fermentation. Let the batter ferment overnight. By morning, it should have risen slightly with small bubbles on top.

  4. Add salt and baking soda: The next day, open the lid and add salt to taste and baking soda. Mix thoroughly.

  5. Steam the Thalia Puttu: Prepare a steamer by heating water over medium heat. Grease the steaming pan with oil, then pour the batter into the pan. Carefully place the pan in the steamer and steam for 15 minutes. You can check for doneness by inserting a skewer into the puttu; if it comes out clean, the Thalia Puttu is ready.

  6. Serve: Once steamed, serve the Kodava Thalia Puttu hot with North Karnataka-style Nuggekai Kharbyaali (a sesame and mango chutney) and fresh coconut chutney for a traditional Coorgi breakfast experience.
