Instructions

  1. Prepare the Potatoes
Start by cooking the new potatoes. In a large pot, bring salted water to a boil, add the potatoes, and cook them until tender, meaning they can be easily pierced with a forkβ€”about 15 to 20 minutes. Once they’re done, drain the potatoes, cover them, and set aside to keep warm while you prepare the basil cream sauce.

  2. Start the Basil Cream Sauce Base
In a large saucepan, combine the dry white wine and chopped shallots. Bring this mixture to a boil over medium-high heat. Allow it to cook for about 1 minute, letting the wine reduce slightly and the shallots soften, which will create a rich flavor base for the sauce.

  3. Incorporate the Cream
Next, add the heavy whipping cream to the saucepan with the wine and shallots. Bring the mixture back to a boil, then reduce the heat to low and let it simmer for around 20 minutes. Stir the sauce frequently to prevent it from sticking to the bottom of the pan. As it simmers, the cream will thicken and take on the flavors of the wine and shallots, creating a smooth, flavorful sauce.

  4. Add the Basil and Seasonings
Once the cream sauce has thickened to a silky texture, stir in the fresh basil, salt, and freshly ground black pepper. The basil will release its flavor and aroma, adding a fragrant, herby note to the sauce. Stir gently until everything is well combined.

  5. Serve the Potatoes with the Basil Cream Sauce
To serve, arrange the warm potatoes on a serving dish and generously spoon the basil cream sauce over them. The sauce should coat each potato for the best flavor in every bite. Serve immediately, while the potatoes and sauce are warm.
