Ingredients:
- 2 cups Broccoli (cut into florets)
- 1 Onion (sliced)
- 4 cloves Garlic (finely chopped)
- 1 cup Milk
- 1/4 cup Whole Almonds (Badam)
- Salt (to taste)
- 1 Whole Black Peppercorns (coarsely pounded)
- 1 teaspoon Extra Virgin Olive Oil

Instructions:
- Start by washing the broccoli florets and prepping the remaining ingredients.
- Soak the almonds in hot water for about 10 minutes, then peel off the skins and set them aside.
- Heat extra virgin olive oil in a wok over medium heat. Add the garlic and onions and sauté until the onions soften, about 1 minute.
- Add the broccoli florets to the pan and sauté for another minute. Sprinkle in some salt, cover the pan, and steam cook the broccoli for 3-4 minutes until just tender.
- Turn off the heat and let the broccoli and onion mixture cool.
- Once cooled, transfer the broccoli, soaked almonds, and milk into a blender or food processor and blend until smooth.
- Pour the blended mixture into a saucepan and bring to a brisk boil. Once boiled, turn off the heat.
- Adjust the salt according to taste and garnish the soup with freshly crushed black pepper.
