Broccoli Almond Soup Recipe – Healthy Soup for Weight Loss

Ingredients:

  • 2 cups Broccoli (cut into florets)
  • 1 Onion (sliced)
  • 4 cloves Garlic (finely chopped)
  • 1 cup Milk
  • 1/4 cup Whole Almonds (Badam)
  • Salt (to taste)
  • 1 Whole Black Peppercorns (coarsely pounded)
  • 1 teaspoon Extra Virgin Olive Oil

Prep Time: 10 minutes

Cook Time: 20 minutes

Instructions:

  1. Start by washing the broccoli florets and prepping the remaining ingredients.
  2. Soak the almonds in hot water for about 10 minutes, then peel off the skins and set them aside.
  3. Heat extra virgin olive oil in a wok over medium heat. Add the garlic and onions and sauté until the onions soften, about 1 minute.
  4. Add the broccoli florets to the pan and sauté for another minute. Sprinkle in some salt, cover the pan, and steam cook the broccoli for 3-4 minutes until just tender.
  5. Turn off the heat and let the broccoli and onion mixture cool.
  6. Once cooled, transfer the broccoli, soaked almonds, and milk into a blender or food processor and blend until smooth.
  7. Pour the blended mixture into a saucepan and bring to a brisk boil. Once boiled, turn off the heat.
  8. Adjust the salt according to taste and garnish the soup with freshly crushed black pepper.
  9. Serve hot and enjoy!
