Title: Carrot Chicken Congee

Ingredients:

  • 4 tablespoons cooked organic rice
  • 2 tablespoons minced boiled free-range chicken
  • 1 medium-sized carrot, shredded
  • 2 tablespoons pre-cooked red beans
  • 5 sprigs celery
  • 2 tablespoons silky tofu (brand: Kong Kee)
  • 1 small cup unsalted butter (brand: Elle)
  • 250 ml chicken broth
  • 1/2 teaspoon extra virgin olive oil (EVOO)

Instructions:

  1. In a pot of boiling chicken broth, add shredded carrot, silky tofu, and minced chicken.

  2. Blend together rice, celery, and red beans until the texture is slightly coarse.

  3. Once the broth mixture has simmered, add the blended rice mixture along with celery and red beans.

  4. Allow everything to cook thoroughly, then turn off the heat and stir in the unsalted butter.

  5. Pour a small amount into a baby feeding bowl. Wait until it’s warm before adding the EVOO (do not add EVOO while hot to preserve its vitamins).
