Ingredients:

  • 1 tuna head (halved, squeezed with lime juice)
  • Long beans or sweet potato leaves
  • 3 kaffir lime leaves
  • 2 bay leaves
  • 1 turmeric leaf
  • 1 small pack of coconut milk (about 200 ml)
  • Cooking oil
  • Sufficient amount of water

Spice Paste:

  • 6 shallots
  • 2 cloves garlic
  • 1 cm turmeric
  • 3 candlenuts
  • 2 lemongrass stalks
  • 2 cm galangal
  • 1 cm ginger
  • Salt
  • Sugar
  • Pepper

Instructions:

  1. Heat cooking oil in a pan, then sautรฉ the spice paste until fragrant.

  2. Add kaffir lime leaves, bay leaves, and turmeric leaf, stir-fry briefly.

  3. Pour in enough water, then add the long beans or sweet potato leaves.

  4. Add the tuna head, cook briefly.

  5. Pour in the coconut milk while stirring continuously to prevent it from curdling.

  6. Cook until the oil separates from the sauce, indicating it is fully cooked.
