Ingredients:

  • 2 salmon fillets
  • 0.5 shallot, coarsely chopped
  • 1-2 tablespoons extra virgin olive oil
  • 1/4 cup butter
  • 1 1/2 – 2 1/2 cups milk
  • 1/4 cup dry white wine
  • 1/4 cup flour
  • 1/2 tablespoon cornstarch
  • 1/4 cup chopped crab meat
  • Old Bay Seasoning, to taste

Instructions:

  1. Prepare the Ingredients:

    • Begin by cleaning and patting dry the salmon fillets. Set them aside.
    • Drain the chopped crab meat and also set it aside.
  2. Cooking Process:

    • Heat a large pan over medium heat and add the olive oil and butter. Make sure not to burn the liquid.
    • Clarify the coarsely chopped shallot by cooking it until translucent. Remove it from the pan and set it aside.
    • In the same pan, add the coarsely chopped crab meat and fast-fry it until slightly browned. Remove it from the pan and set it aside.
    • Adjust the oil or butter in the pan as needed.
    • Place the salmon fillets, skin side down, into the pan and cover. Let them cook for about 10 minutes or until the flesh turns pink.
    • Carefully flip the fillets over and cook for an additional 5 minutes or until the topside is nicely browned.
    • Remove the salmon fillets from the pan, place them on a plate (skin side up), and keep them warm. Carefully peel back and discard the skin.
  3. Prepare the Creamy, White Wine, Crab-Meat Sauce:

    • Add flour or cornstarch to the pan, whisking constantly until all the browning juices are absorbed.
    • Slowly add half of the milk while whisking constantly. Once the mixture thickens, add the remaining milk while continuing to whisk.
    • Once the mixture is smooth and blended, add the crab meat and shallots. Mix constantly to ensure thorough blending.
    • Season with Old Bay Seasoning to taste.
    • Pour in the dry white wine and mix well until the crab meat mixture is completely blended and thickened.
    • Turn off the burner and cover the pan while you prepare the salmon fillets for serving.
  4. Serving:

    • Place the warm salmon fillets on preheated dinner plates.
    • Divide the creamy crab-meat sauce evenly between the two servings and spoon it over the salmon fillets.
