Ingredients:
- 6 eggs
- 1 1/2 cups sugar
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/2 cups water or skim milk
- 1 teaspoon vanilla extract
- 1 can (14 ounces) sweetened condensed milk
- 1 cup heavy whipping cream
- 2 tablespoons light corn syrup
- 1 can (12 ounces) evaporated milk
- 1 pint heavy whipping cream
- 1/2 cup sugar
- 1 teaspoon vanilla extract
- 1 cup sour cream
- 1/2 cup icing sugar
Instructions:
- In a large mixing bowl, beat the egg whites until soft peaks form.
- Gradually beat in the sugar until soft peaks form.
- Add the egg yolks one at a time, beating until combined.
- In another bowl, combine the flour, baking powder, baking soda, and salt. Add this mixture to the egg mixture alternately with water or skim milk.
- Stir in the vanilla extract.
- Pour the batter into a greased 13″ x 9″ baking pan.
- Bake at 350 degrees Fahrenheit for 35-45 minutes, or until a toothpick inserted into the center comes out clean.
- Cool the cake on a wire rack.
- Poke holes all over the cake with a fork or thin straw.
- Chill the cake, covered, in the fridge overnight.
The Following Day:
- In a saucepan, combine the sweetened condensed milk, 1 cup of heavy cream, corn syrup, and evaporated milk.
- Bring the mixture to a boil over medium heat, stirring constantly. Cook and stir for 2 minutes.
- Remove the mixture from the heat and stir in the vanilla extract.
- Slowly pour the milk mixture over the cold cake, allowing it to absorb into the cake.
- Cover the cake and refrigerate it.
For the Icing:
- In a mixing bowl, beat the remaining heavy whipping cream until soft peaks form.
- Gradually beat in the sugar until stiff peaks form.
- Stir in the vanilla extract.
- In another bowl, combine the sour cream, icing sugar, and almond extract.
- Fold the whipped cream into the sour cream mixture.
- Spread the icing over the chilled cake.
- Refrigerate the cake until serving.
