Creamy Egg Mie Goreng

Ingredients:

  • 1 packet small-sized Burung Dara noodles
  • 1 carrot, julienned
  • A handful of green leafy mustard greens
  • A handful of white mustard greens
  • 1 tomato, diced
  • 1 stalk green onion, chopped
  • 1 egg
  • 2 cloves garlic, minced
  • 1 shallot, thinly sliced
  • Soy sauce
  • Sweet soy sauce
  • Oyster sauce
  • Sesame oil
  • Black pepper, to taste

Instructions:

  1. Prepare the Noodles: Bring a pot of water to a rolling boil. Add the Burung Dara noodles and cook for 3 minutes until just tender. Drain and set aside.

  2. Season the Noodles: In a large mixing bowl, combine the cooked noodles with soy sauce, sweet soy sauce, oyster sauce, and a splash of sesame oil. Toss well to coat the noodles evenly. Set aside.

  3. Stir-Fry the Vegetables: Heat a bit of oil in a large pan or wok over medium heat. Add the minced garlic and sliced shallot, and stir-fry until fragrant and golden brown.

  4. Add Vegetables: Add the julienned carrot, green leafy mustard greens, and white mustard greens to the pan. Stir-fry until the vegetables are slightly tender but still crisp.

  5. Combine Noodles and Vegetables: Add the seasoned noodles to the pan with the vegetables. Toss everything together to ensure the noodles and vegetables are well combined.

  6. Add Tomato and Green Onions: Stir in the diced tomato and chopped green onions, cooking for an additional 2 minutes.

  7. Cook the Egg: Push the noodle mixture to one side of the pan and crack the egg into the empty space. Scramble the egg until cooked through, then mix it into the noodles.

  8. Season and Serve: Season the dish with black pepper to taste. Serve hot and enjoy your creamy, flavorful Mie Goreng!
