Chaman Kaliya (Kashmiri Paneer Curry)

Chaman Kaliya is a rich and creamy Kashmiri paneer curry flavored with aromatic spices like fennel and cardamom. The addition of saffron and other Kashmiri spices elevates the flavor, making it a delightful dish for any dinner.

Ingredients:

  • 500 grams paneer, chopped
  • Mustard, as per requirement
  • A pinch of saffron
  • 1 bay leaf
  • 1 cinnamon stick
  • 4 cloves
  • 1 cup full-fat milk
  • 6 cups water
  • 2 tablespoons turmeric powder
  • 1 teaspoon cumin powder
  • 3 tablespoons fennel powder
  • Salt, to taste
  • 1 teaspoon cardamom powder
  • Fresh coriander leaves, for garnish

Preparation Time: 20 minutes
Cooking Time: 25 minutes

Instructions:

  1. Heat oil in a wok. Add the bay leaf, cinnamon stick, and cloves. Cook for 30 seconds to release their aromas.
  2. Add 6 cups of water and bring it to a boil. Once boiling, add the turmeric powder, cumin powder, salt, and fennel powder. Stir well and let it simmer until the water reduces by half.
  3. Add the chopped paneer pieces and cook for 3 to 4 minutes.
  4. After the paneer has cooked, add the full-fat milk and saffron, and stir to combine. Let it cook for an additional 5 minutes.
  5. Add the cardamom powder, mix well, and turn off the heat.
  6. Garnish with fresh coriander leaves.
