Chaman Kaliya (Kashmiri Paneer Curry)

Ingredients:
- 500 grams paneer, chopped
- Mustard, as per requirement
- A pinch of saffron
- 1 bay leaf
- 1 cinnamon stick
- 4 cloves
- 1 cup full-fat milk
- 6 cups water
- 2 tablespoons turmeric powder
- 1 teaspoon cumin powder
- 3 tablespoons fennel powder
- Salt, to taste
- 1 teaspoon cardamom powder
- Fresh coriander leaves, for garnish
Preparation Time: 20 minutes
Cooking Time: 25 minutes
Instructions:
- Heat oil in a wok. Add the bay leaf, cinnamon stick, and cloves. Cook for 30 seconds to release their aromas.
- Add 6 cups of water and bring it to a boil. Once boiling, add the turmeric powder, cumin powder, salt, and fennel powder. Stir well and let it simmer until the water reduces by half.
- Add the chopped paneer pieces and cook for 3 to 4 minutes.
- After the paneer has cooked, add the full-fat milk and saffron, and stir to combine. Let it cook for an additional 5 minutes.
- Add the cardamom powder, mix well, and turn off the heat.
- Garnish with fresh coriander leaves.
