Step Instruction
1 Soak the cashews in warm water for 5–10 minutes, then blend into a smooth paste. Set aside.
2 Heat 1 teaspoon of oil in a pan or skillet. Add the sliced mushrooms and sauté for about 3 minutes until they soften slightly. Remove and set aside.
3 In the same pan, add the remaining oil. Add the finely chopped onions and sauté until golden brown.
4 Add the grated ginger and minced garlic to the onions. Sauté for 2 minutes until the raw aroma disappears.
5 Stir in the chopped tomatoes and red chili powder. Cook until the tomatoes become soft and mushy. Add salt to taste and mix well.
6 Add the cashew paste to the pan, stirring it into the tomato-onion mixture. Cook for 2–3 minutes on medium heat, adding a splash of water if the mixture seems too thick.
7 Pour in about ½ cup of water and let the curry simmer for 3 minutes to achieve a smooth consistency. Adjust water quantity based on the desired thickness.
8 Add the sautéed mushrooms back to the pan and stir gently to coat them in the gravy. Sprinkle the garam masala powder and cook for another 1–2 minutes.
9 Garnish the curry with fresh cilantro. Serve hot with roti, naan, or steamed rice.
