Ingredients:

  • 6 tablespoons butter
  • 1 green onion, finely chopped
  • 6 tablespoons chopped parsley
  • 1/4 red sweet bell pepper, finely chopped
  • 2 tablespoons all-purpose flour
  • 1 cup milk
  • 8 ounces cream cheese, softened
  • 1 tablespoon dry sherry
  • 1 cup grated Parmesan cheese
  • 2 teaspoons paprika
  • Pinch of cayenne pepper
  • Salt and pepper to taste
  • 1 pound crabmeat, picked over for shells

Instructions:

  1. Preheat your oven to 350ºF (175ºC).

  3. Add the flour all at once, stirring continuously until combined. Season with salt and pepper.

  4. Reduce the heat to low and gradually add the milk, stirring constantly until smooth and thickened, about 5 minutes.

  5. Add the softened cream cheese to the skillet, stirring until fully incorporated into the sauce.

  6. Remove the skillet from heat and stir in the dry sherry.

  7. Place the crabmeat in a large greased ovenproof casserole dish.

  8. Pour the milk mixture over the crabmeat, folding gently to combine.

  9. Sprinkle the top evenly with Parmesan cheese, paprika, and a pinch of cayenne pepper.

  10. Bake in the preheated oven for 20 minutes or until the sauce is bubbly and the top is golden brown.

  11. Serve hot as a delicious main dish or appetizer with crackers, toast, or as part of a larger meal.
