Opor Shrimp, Eggs, and Long Beans Recipe

Ingredients:

  • 500 grams shrimp, peeled and deveined
  • 1 bunch of long beans, cut into pieces
  • 4 eggs
  • 1 packet of instant opor seasoning (such as Indofood)
  • 500 ml coconut milk
  • 2 bay leaves
  • 2 kaffir lime leaves
  • 1 stalk lemongrass, smashed
  • Salt, to taste
  • Flavor enhancer (optional), to taste

Instructions:

  1. Prepare the Eggs: Start by boiling the eggs until they are hard-cooked. Once done, set them aside to cool.

  2. Prep the Shrimp and Beans: Clean the shrimp thoroughly and set aside. Wash the long beans and cut them into pieces.

  3. Cook the Aromatics: Heat a pan over medium heat and add the instant opor seasoning, bay leaves, kaffir lime leaves, and smashed lemongrass. Stir until fragrant.

  4. Add the Coconut Milk: Pour in the coconut milk, stirring continuously to ensure that it doesn’t separate or curdle. Allow it to come to a gentle simmer.

  5. Incorporate the Shrimp: Add the shrimp to the pan. Cook until the shrimp starts to turn pink and is almost cooked through.

  6. Add the Long Beans: Once the shrimp is partially cooked, add the long beans. Let the mixture cook until the beans are tender and the coconut milk has slightly reduced.

  7. Season: Add salt and a flavor enhancer if using, according to your taste preferences.

  8. Finish with Eggs: Gently add the boiled eggs into the pan. Stir carefully to avoid breaking the eggs. Allow the mixture to cook for a few more minutes to blend the flavors.

  9. Serve: Turn off the heat and serve the dish hot.

Note: For a richer and more authentic flavor, use fresh coconut milk from the market instead of the packet. It adds a touch of sweetness and freshness to the dish. Enjoy your meal!
