Opor Shrimp, Eggs, and Long Beans Recipe
Ingredients:
- 500 grams shrimp, peeled and deveined
- 1 bunch of long beans, cut into pieces
- 4 eggs
- 1 packet of instant opor seasoning (such as Indofood)
- 500 ml coconut milk
- 2 bay leaves
- 2 kaffir lime leaves
- 1 stalk lemongrass, smashed
- Salt, to taste
- Flavor enhancer (optional), to taste

Prepare the Eggs: Start by boiling the eggs until they are hard-cooked. Once done, set them aside to cool.

Prep the Shrimp and Beans: Clean the shrimp thoroughly and set aside. Wash the long beans and cut them into pieces.

Cook the Aromatics: Heat a pan over medium heat and add the instant opor seasoning, bay leaves, kaffir lime leaves, and smashed lemongrass. Stir until fragrant.

Add the Coconut Milk: Pour in the coconut milk, stirring continuously to ensure that it doesn’t separate or curdle. Allow it to come to a gentle simmer.

Incorporate the Shrimp: Add the shrimp to the pan. Cook until the shrimp starts to turn pink and is almost cooked through.

Add the Long Beans: Once the shrimp is partially cooked, add the long beans. Let the mixture cook until the beans are tender and the coconut milk has slightly reduced.

Season: Add salt and a flavor enhancer if using, according to your taste preferences.

Finish with Eggs: Gently add the boiled eggs into the pan. Stir carefully to avoid breaking the eggs. Allow the mixture to cook for a few more minutes to blend the flavors.

Serve: Turn off the heat and serve the dish hot.
