Instructions

  1. Start by boiling a large pot of salted water to cook the pasta. Once it reaches a rolling boil, add the egg tagliatelle and cook according to the package instructions until al dente.

  2. While the pasta cooks, slice the smoked salmon into thin strips. Finely chop the parsley for garnish. Set both aside.

  3. In a large pan, heat a drizzle of extra virgin olive oil over medium heat. Add the finely chopped onion and sauté until it softens and turns golden, about 3-4 minutes.

  4. Once the onions are soft, add the smoked salmon strips to the pan. Let them cook gently for 2-3 minutes until they warm through and release their rich, smoky aroma.

  5. Add the fresh liquid cream and brandy to the pan with the salmon. Stir everything together and let it simmer gently for 2-3 minutes, allowing the cream to thicken slightly and absorb the flavors.

  6. By now, the pasta should be cooked. Drain the tagliatelle, reserving a bit of the cooking water. Add the pasta directly to the pan with the creamy salmon sauce.

  7. Toss the pasta in the sauce, making sure each strand is coated with the creamy goodness. If the sauce seems too thick, you can add a splash of the reserved pasta cooking water to loosen it up.

  8. Return the pan to the heat for a minute or so, stirring continuously to allow the sauce to come together and coat the pasta.

  9. Once everything is well combined, remove from the heat. Sprinkle the chopped parsley over the pasta and finish with a generous grind of black pepper to taste.

  10. Serve your creamy smoked salmon tagliatelle immediately, garnished with a little extra parsley if desired. Enjoy the rich, smoky flavor combined with the velvety cream sauce.
