Instructions:

Step Description
1 Peel and thinly slice the onions and garlic.
2 Peel the potato and cut it into cubes.
3 Heat a large heavy-bottomed pot over medium heat.
4 Add a little oil to the pot, then fry the whole spices (cumin seeds, fennel seeds, cardamom pods, and cloves) for a few seconds until fragrant.
5 Reduce the heat and add the butter to the pot.
6 Add the sliced onions and garlic to the pot and fry until soft and lightly colored.
7 Add the cubed potatoes to the pot and cook for 10 minutes, stirring occasionally.
8 Pour in the water and bring it to a boil.
9 Reduce the heat and let the soup simmer for 20 minutes, allowing the flavors to meld together.
10 Tip in the fresh spinach and stir until the leaves have wilted.
11 Mash the contents of the pan to incorporate the spinach into the soup.
12 Sieve the soup to achieve a smooth consistency.
13 Stir in the plain yogurt until well combined.
