Cook Time: 15 minutes
Total Time: 20 minutes
Servings: 4
Ingredients:
- 4 tbsp butter
- 4 tbsp all-purpose flour
- 3 cups milk
- 3/4 cup dark beer
- 1 clove garlic, minced
- Pinch of crushed red pepper flakes (optional)
- 1 lb extra-sharp cheddar cheese, shredded
Instructions:
-
Prepare the Roux:
- In a sauté pan, melt butter over low heat.
- Add flour and cook, stirring constantly, until the mixture begins to bubble. Be careful not to let it brown.
- Remove from heat and set aside.
-
Heat the Milk Mixture:
- In a separate saucepan, heat milk over medium heat until it is just about to boil.
- Add minced garlic, salt, pepper, and crushed red pepper flakes (if using). Stir gently until just below boiling.
-
Combine and Thicken:
- Gradually add half of the prepared roux (flour/butter mixture) to the hot milk mixture, stirring constantly with a wire whisk.
- Bring to a low simmer and continue stirring until slightly thickened. If a thicker consistency is desired, additional roux can be added gradually.

Add Cheese and Beer:
- Reduce heat to low and gradually add shredded cheddar cheese, stirring constantly until melted and smooth.
- Pour in dark beer and stir until well combined. Be careful not to boil the soup once the beer is added.
-
Finish and Serve:
- The soup should have a smooth texture. If needed, it can be reheated gently on low heat.
- Serve hot, garnished with additional shredded cheese if desired.
