Creamless Broccoli Soup Recipe

Description:
You will never miss the cream in this soup. It is a filling vegan recipe anyone would enjoy. Found in one of my favorite Moosewood cookbooks.
Ingredients:
- 1 tablespoon canola oil
- 2 onions
- 1/4 cup celery
- 2 garlic cloves
- 1/2 teaspoon salt
- 2 heads of broccoli
- 4 1/2 cups water or vegetable stock
- 1/3 cup quick-cooking oatmeal
- 1 tablespoon fresh lemon juice
- 1 teaspoon dried dill
- 1/2 teaspoon black pepper
- Fresh chives for garnish
- Lemon slices for garnish
Instructions:

Prepare the Base:
- In a soup pot, combine canola oil, chopped onions, celery, minced garlic, and salt.
- Cook covered on medium heat for 10 minutes, stirring often to prevent sticking.

Prep the Broccoli:
- Rinse the broccoli thoroughly.
- Cut into 4-5 cups of florets, and peel and chop the stems to make about 2 cups.
- Reserve 1 cup of florets for later use.

Cook the Broccoli:
- When the onions are clear, add 4 cups of water or vegetable stock and all the broccoli except for the reserved florets.
- Cover and bring to a boil, then lower the heat and simmer for 5 minutes.

Add Oatmeal:
- Add the quick-cooking oatmeal and simmer gently for about 10 minutes, stirring often, until the broccoli is tender and the soup begins to thicken.

Season the Soup:
- Remove from the heat and stir in fresh lemon juice, dried dill, and black pepper.

Puree the Soup:
- Working in batches, puree the soup until smooth. A blender is preferred for this step to achieve a creamy texture.

Cook the Reserved Florets:
- Bring the remaining 1/2 cup of water to a boil in a small saucepan.
- Add the reserved broccoli florets and cook, covered, until they are bright green and crisp-tender, about 3-5 minutes.

Combine and Garnish:
- Stir the cooked florets and their cooking water into the pureed soup.
- Garnish the soup with lemon slices and fresh chives, if desired.

Serve:
- Ladle the creamless broccoli soup into bowls and serve hot.
