Instructions:

  1. In a non-stick 12-inch skillet, heat olive oil over medium heat.
  2. Add chopped onion and cook until tender, about 5 minutes.
  3. Add minced garlic and crushed red pepper flakes; continue cooking until the garlic turns golden, approximately 30 seconds longer.
  4. Stir in the tomato puree, vodka (if using), and salt. Increase the heat to high and bring the mixture to a boil.
  5. Reduce the heat to low and let the sauce simmer until it thickens, which should take about 15 to 20 minutes.
  6. Stir in the heavy cream and peas (if desired), then bring the sauce back to a boil.
  7. Meanwhile, in a large saucepot, cook the penne and rotini pasta according to the package instructions. Drain the cooked pasta.
