La Bottega di Olivia & Marino (crispy flatbread) 12 pieces
Cherry tomatoes 6
Pecorino Romano cheese 25g

Instructions:

  1. Begin by preparing the guanciale, cutting it into thin strips to ensure a delicate texture.
  2. Use a vegetable peeler to shave the Pecorino Romano cheese into thin, delicate flakes, which will add a rich, salty flavor to your dish.
  3. Heat a non-stick pan over medium heat. Once the pan is hot, add the guanciale strips and cook them gently, letting the fat render out and the meat become crispy. This should take around 3-4 minutes.
  4. While the guanciale is cooking, heat the cherry tomatoes in a separate pan for just a minute or two until they begin to soften and release their juices.
  5. Assemble the dish by placing each crispy flatbread (La Bottega di Olivia & Marino) onto a serving platter.
  6. Top each piece with the crispy guanciale, followed by a spoonful of the softened cherry tomatoes.
  7. Finish each serving with a generous sprinkle of the shaved Pecorino Romano and a fresh crack of black pepper to taste.
