Ingredients:

  • 1 cup sweet corn (maize)
  • 1/4 cup gram flour
  • 1 onion, chopped
  • 2 green chillies, finely chopped
  • 1 sprig curry leaves
  • 4 cloves garlic, minced
  • 1 teaspoon nigella seeds (kalonji)
  • Salt to taste

Instructions:

  1. Prepare the Corn Mixture:
    Begin by placing the sweet corn (maize) in a mixer grinder. Pulse the corn to a coarse pasteโ€”be careful not to over-blend it. The texture should be slightly grainy, not smooth. Transfer the ground corn to a mixing bowl.

  2. Add the Ingredients:
    To the corn paste, add the gram flour, chopped onion, finely chopped green chillies, curry leaves, minced garlic, nigella seeds, and salt. Mix everything thoroughly to combine. Let the mixture rest for a few minutes.

  3. Shape the Vadas:
    Once the mixture is ready, heat oil in a deep frying pan over medium heat. While the oil is heating, shape the corn mixture into small round discs or vadas using your hands.

  4. Fry the Vadas:
    Carefully place the shaped vadas one by one into the hot oil. Fry them until they turn golden brown and crispy on both sides. This will take around 5-7 minutes per batch.

  5. Drain Excess Oil:
    Once cooked, remove the vadas from the oil and place them on a kitchen towel to absorb any excess oil.

  6. Serve:
    Serve your hot, crispy Andhra Style Makka Garelu with coconut chutney or coriander-mint chutney and a steaming cup of masala chai for the perfect snack.
