Apple and Almond Biscotti

Ingredients:

Golden Apples 230g
Whole Wheat Flour 130g
All-Purpose Flour 125g
Almond Flour 125g
Muscovado Sugar 100g
Sunflower Oil 200g
Eggs 110g
Lemon Zest 1
Sliced Almonds To taste

Instructions:

  1. Start by washing the Golden apples thoroughly. Cut them into quarters, then slice them thinly and roughly chop them with a knife to create small chunks of apple.

  2. In a large mixing bowl, combine the muscovado sugar and eggs. Mix well.

  3. Grate the lemon zest into the bowl, adding it to the sugar and egg mixture. Stir in the chopped apple pieces.

  4. Add the almond flour and all-purpose flour to the mixture. Continue mixing using a spatula until everything is well incorporated into a smooth dough.

  5. Transfer the dough into a piping bag fitted with a star-shaped nozzle (10mm size). This will help shape the biscotti into their signature form.

  6. Line a baking tray with parchment paper. Pipe the dough into long, thin sticks on the tray, spacing them evenly.

  7. Decorate the top of each biscotti with a few almond slivers for an extra crunch and a beautiful presentation.

  8. Continue piping and decorating until all the dough is used up.

  9. Place the tray in a preheated oven and bake at 180°C (350°F) for about 15-20 minutes or until the biscotti are golden and firm to the touch.

  10. Once baked, remove the biscotti from the oven and allow them to cool completely before serving.
