Instructions:

Start by washing the Golden apples thoroughly. Cut them into quarters, then slice them thinly and roughly chop them with a knife to create small chunks of apple.

In a large mixing bowl, combine the muscovado sugar and eggs. Mix well.

Grate the lemon zest into the bowl, adding it to the sugar and egg mixture. Stir in the chopped apple pieces.

Add the almond flour and all-purpose flour to the mixture. Continue mixing using a spatula until everything is well incorporated into a smooth dough.

Transfer the dough into a piping bag fitted with a star-shaped nozzle (10mm size). This will help shape the biscotti into their signature form.

Line a baking tray with parchment paper. Pipe the dough into long, thin sticks on the tray, spacing them evenly.
