Crispy Ayam Geprek with Spicy Sambal
Ingredients:

For the Chicken:
- 1 kg chicken (cut into desired pieces)
- 5 cloves garlic, minced
- 1 lime, juiced
- 1 packet all-purpose flour
- Ice water
- Cooking oil (for frying)
- Salt, to taste
- Sugar, to taste

For the Sambal:
- 10 bird’s eye chilies (cabe rawit setan)
- 3 cloves garlic
- Oil (used for frying the chicken)
Instructions:

Prepare the Chicken:
- Cut the chicken into pieces according to your preference.
- Rub the chicken with minced garlic and lime juice. Allow it to marinate for a few minutes.

Prepare the Coating:
- In a bowl, combine the all-purpose flour with a pinch of salt and sugar.
- In another bowl, prepare ice water for dipping the chicken.

Coat the Chicken:
- Dredge the marinated chicken pieces in the dry flour mixture.
- Dip the floured chicken into the ice water, then return it to the flour mixture, ensuring it’s well-coated. Gently press the flour onto the chicken to adhere well.
- Heat oil in a frying pan over medium-high heat. Fry the chicken pieces in the hot oil until they are golden brown and crispy. Remove and drain on paper towels.

Make the Sambal:
- In a mortar and pestle, grind the bird’s eye chilies and garlic until smooth.
- Heat a small amount of the leftover oil used for frying the chicken in a pan. Pour the hot oil over the ground chili and garlic mixture to create a fragrant sambal.

- Serve the crispy fried chicken with the hot sambal on top or on the side. Enjoy this delicious, spicy Indonesian dish as a main course or a tasty appetizer.
