Instructions

1. Preparing the Pastry:

  1. In a food processor, combine cold butter, flour, and salt. Pulse until the mixture resembles breadcrumbs (about 2-3 minutes).
  2. Add the egg and lemon juice and process until the dough starts to come together in a ball.
  3. Turn the dough out onto a floured surface and gently knead it just to bring it together. Avoid overworking the dough to keep the pastry light and flaky.
  4. Wrap the dough in cling film and chill in the refrigerator for at least 30 minutes to rest.

2. Preparing the Filling:

  1. Melt 1 tablespoon of butter in a frying pan over medium heat. Add the chopped onion and cook until it becomes translucent, about 5-7 minutes.
  2. Add the minced garlic to the pan and cook for another minute, until fragrant. Remove the onion and garlic mixture from the pan and set aside.
  3. In the same pan, melt the remaining butter. Add the bacon strips and cook, turning occasionally, until the bacon is slightly caramelized and crisp. Remove from heat and stir in the cooked onion and garlic mixture. Set aside.

3. Assembling the Tart:

  1. Preheat the oven to 200°C (400°F).
  2. Lightly grease an 8-inch fluted tart tin or 12 mini tart molds.
  3. Roll out the chilled pastry dough on a lightly floured surface to a thickness of 2-3mm. If the dough is too sticky, sprinkle some flour or use a baking sheet to help with rolling.
  4. Gently transfer the rolled dough into the prepared tart tin, pressing it into the edges and trimming any excess pastry. Prick the base of the pastry with a fork to prevent it from puffing up during baking.
  5. Line the pastry with a sheet of baking paper and fill with rajma (kidney beans) or chana (chickpeas) to blind-bake. Bake for 15-20 minutes, or until the pastry is golden and slightly crisp.
  6. After blind baking, remove the paper and beans, and return the tart shell to the oven for an additional 5 minutes to crisp up the base.

4. Making the Quiche Filling:

  1. In a mixing bowl, whisk together the cream, whole eggs, and egg yolks until smooth. Season with salt and black pepper to taste.
  2. Once the pastry shell is ready, fill the bottom with the bacon and onion mixture. Sprinkle half of the grated cheese over the filling.
  3. Pour the prepared egg mixture over the filling, and top with the remaining cheese and the chopped parsley.

5. Baking the Quiche:

  1. Bake the tart in the preheated oven at 200°C (400°F) for 15 minutes.
  2. After 15 minutes, reduce the temperature to 160°C (325°F) and continue baking for another 5-10 minutes, or until the custard is fully set and lightly golden on top.
