Ingredients:
- 2 cups Whole Wheat Flour
- 1/2 cup Gram Flour (Besan)
- 1 cup Bitter Gourd (Karela) Peel
- 2 tbsp Ajwain (Carom Seeds)
- 2 tsp Red Chilli Powder
- 1 tsp Turmeric Powder (Haldi)
- 1 tsp Coriander Powder (Dhania)
- Salt to taste
- Oil for frying

Prepare the Dough:
In a large bowl, combine whole wheat flour, gram flour, bitter gourd peel, ajwain, red chilli powder, turmeric powder, coriander powder, and salt. Gradually add water, kneading the mixture into a soft, smooth dough. Allow the dough to rest for at least 30 minutes to ensure it’s easy to roll out. -
Heat Oil for Frying:
In a deep pan (kadai), heat enough oil for frying the puris. The oil should be sufficiently hot but not smoking. -
Shape the Puri:
Divide the rested dough into small portions. Roll each portion into a ball and dust your rolling surface with flour. Using a rolling pin, flatten the dough into small, thick round puris. -
Fry the Puri:
Gently slide each flattened puri into the hot oil. Press down on the puri using a slotted spoon, occasionally spooning hot oil over the top to help it puff up. Once it has puffed up and turned golden brown, flip it to fry the other side. Ensure each puri is fried for no more than 2 minutes to avoid it becoming brittle. -
Drain and Serve:
Remove the puris from the oil and drain on a kitchen towel to remove excess oil. Continue frying the remaining puris. -
Serving Suggestion:
Serve the Bitter Gourd Peel Puri hot, paired with Chole Masala, Pickled Onions, and Boondi Raita for a satisfying and hearty meal.
