Prepare the Broccoli
Begin by cutting the broccoli into florets, discarding the main stem. Rinse the florets thoroughly and then cut them in half. Set aside. -
Cook the Potatoes
Peel the potatoes and cut them into small pieces. In a frying pan, heat a drizzle of olive oil over medium heat. Add the garlic clove (you can remove it later) and sauté until fragrant. Add the potatoes, seasoning with salt and pepper to taste. Sprinkle in the marjoram and cover the pan, letting the potatoes cook for around 10-12 minutes, or until tender. Once the potato mixture has cooled, add the grated Grana Padano cheese and breadcrumbs to the pan. Add the egg, and stir everything together to form a cohesive dough. If needed, add a splash of vegetable broth to help the mixture come together. Divide the dough into four equal portions. -

Line a tray with parchment paper. To shape the burgers, place a 12cm round cookie cutter on the tray and fill it with one portion of the mixture. Gently press down to compact it, then remove the cutter. Repeat for the remaining portions. -
Cook the Burgers
Heat a non-stick frying pan over medium heat and add a bit of sunflower oil. Fry each burger for about 4-5 minutes on each side, or until golden and crispy. Remove from the pan and set aside. -
Prepare the Tomatoes
Slice the ripe tomatoes into thin rounds. Set aside for serving. -
