Carrot Chicken Nuggets Recipe

Ingredients:

  • 500 grams chicken breast (or preferred chicken part)
  • 3 medium carrots
  • 4 tablespoons all-purpose flour
  • 2 tablespoons tapioca flour
  • 2 eggs
  • For the seasoning blend:
    • 4 cloves garlic
    • 3 shallots
    • A pinch of pepper (to taste)
    • Salt (to taste)
    • Sugar (to taste)
    • Mushroom seasoning (optional)
  • For coating:
    • All-purpose flour
    • Bread crumbs
    • 1 beaten egg

Instructions:

  1. Prepare the Chicken and Carrots:

    • Start by blending the chicken breast with 1 egg until smooth. To help neutralize the chicken’s odor, you can add a splash of lime juice before blending.
    • While the chicken is blending, grate the carrots finely. Alternatively, you can blend the carrots together with the chicken if you prefer a smoother texture.
  2. Mix the Ingredients:

    • In a mixing bowl, combine the blended chicken with the grated carrots.
    • Add the finely blended garlic and shallots to the mixture.
    • Season the mixture with salt, sugar, pepper, and mushroom seasoning if using.
  3. Incorporate Flours:

    • Mix in the all-purpose flour and tapioca flour. If the mixture appears too runny, gradually add more all-purpose flour until the consistency is firm.
    • To test the seasoning, fry a small spoonful of the mixture. If it tastes too salty, adjust by adding more flour. Ensure the seasoning is well-balanced.
  4. Steam the Nuggets:

    • Pour the mixture into a greased baking tray and steam for 15-20 minutes. To check if it’s done, use a fork—if it comes out clean and doesn’t stick, the mixture is ready.
  5. Cool and Cut:

    • Allow the steamed mixture to cool before cutting it into desired nugget shapes.
  6. Coat the Nuggets:

    • Prepare three bowls: one with all-purpose flour, one with beaten egg, and one with bread crumbs.
    • Dip each nugget piece first in the flour, then the egg, and finally coat it with bread crumbs.
  7. Freeze and Fry:

    • For better bread crumb adherence, place the coated nuggets in the freezer for about 20 minutes.
    • Fry the nuggets in hot oil until golden brown and crispy.
