Cauliflower Croquettes Recipe

Description:
These Cauliflower Croquettes are a delightful, kid-friendly snack perfect for parties or as an after-school treat. The cauliflower is cleverly incorporated into these bite-sized croquettes that will disappear quickly! For a healthier twist, we’ve opted for shallow frying instead of deep-frying, and you can even use a Kuzhi Paniyaram pan for minimal oil. Shape them however you like, and theyโ€™re sure to be a hit at any occasion!

Ingredients:

  • 1 Cauliflower (gobi), cut into small pieces
  • 1/2 cup All Purpose Flour (Maida)
  • 1 cup Milk
  • 2 tablespoons Salted Butter
  • 4 cloves Garlic, chopped
  • 1 tablespoon Rosemary
  • 1 tablespoon Dried Thyme Leaves
  • 3 tablespoons Tabasco Original – Hot Sauce
  • Salt, to taste
  • 1 Whole Egg
  • 1/2 cup Whole Wheat Bread Crumbs
  • Oil, for frying

Instructions:

  1. Cook the Cauliflower:

    • Pressure cook the cauliflower with a little water and salt for 2 whistles. Allow the pressure to release naturally and set it aside to cool.
  2. Make the Flour Mixture:

    • In a saucepan, heat the milk and add butter, garlic, and a pinch of salt. Bring it to a boil.
    • Once boiling, slowly add the all-purpose flour, whisking continuously until the mixture thickens and forms a lump. Let it rest for a few minutes to cool.
  3. Prepare the Cauliflower Filling:

    • Blitz the cooled cauliflower in a blender to form a coarse mixture.
    • In a separate saucepan, heat some butter, then add chopped garlic and sautรฉ for a few seconds.
    • Add the cauliflower mixture, followed by rosemary, thyme, and Tabasco sauce. Stir in salt to taste. Cook the mixture for 10-15 minutes, then set aside to cool.
  4. Combine the Mixtures:

    • Mix the cooled cauliflower filling into the flour and milk mixture. Shape the mixture into cylindrical croquettes.
    • Refrigerate the croquettes for at least 15 minutes in the freezer to firm them up.
  5. Coat and Fry:

    • Whisk the egg in a plate and place the bread crumbs beside it.
    • Heat oil in a flat skillet for shallow frying. Dip each croquette in the egg, then coat it evenly with bread crumbs.
    • Carefully drop the croquettes into the hot oil and shallow fry them until golden brown.
    • Once fried, drain the croquettes on a paper napkin to remove excess oil.
  6. Serve:

    • Serve the delicious Cauliflower Croquettes with a side of Tzatziki or Cottage Cheese Dip with Pepper and Olives for an extra layer of flavor at your party or gathering.
