Ingredients:

  • 4 small slices of chicken fillet or 1 piece of chicken breast
  • 1 large block of silken tofu or Chinese tofu
  • A small bunch of chives
  • 4 medium-sized cloves of garlic
  • 1 egg
  • Salt to taste
  • Optional: Mushroom broth powder (Totole)
  • 5 tablespoons of all-purpose flour

Steps:

  1. Prepare Ingredients:

    • Use a food processor to combine all the ingredients except for the egg, flour, salt, and mushroom broth powder.
    • Finely slice the chives before adding them to the food processor to ensure a better texture and appearance.
  2. Blend the Ingredients:

    • Process the mixture until it reaches a smooth consistency.
    • Transfer the mixture from the food processor into a mixing bowl.
  3. Add Egg:

    • Add the egg to the mixture and stir until it is well incorporated.
  4. Incorporate Dry Ingredients:

    • Add the flour, salt, and optional mushroom broth powder.
    • Mix thoroughly to achieve a slightly soft texture.
  5. Frying:

    • Heat a generous amount of oil in a frying pan.
    • Use two spoons to shape and drop the mixture into the hot oil. The shapes might not be perfect, but the taste will be fantastic.
    • Fry until golden brown.
  6. Serve:

    • Once cooked, remove the fritters from the oil and let them drain on paper towels to remove excess oil.
    • Serve hot and enjoy these delicious Perkedel Tahu Cina and Ayam.

Tips for Perfect Perkedel:

  • Using silken tofu will give a smoother texture, but if you prefer a firmer texture, use Chinese tofu.
  • Adjust the amount of flour according to the moisture content of the tofu and chicken mixture.
  • For an extra burst of flavor, consider adding finely chopped scallions or a pinch of white pepper to the mixture.

This recipe is perfect for a quick snack or a side dish, bringing a delightful combination of chicken and tofu, enhanced with the subtle aroma of chives and garlic. The mushroom broth powder adds an umami depth, making these fritters an irresistible treat. Enjoy the simple yet delicious flavors of this traditional Indonesian dish!
