Instructions
-
Prepare the Chicken and Vegetables:
- Rinse the chicken breast thoroughly and pat dry. Dice the chicken into small pieces.
- Peel and wash the carrot and garlic. Grate the carrot and garlic using a fine grater or food processor.
-
Blend the Mixture:
- In a blender, combine the diced chicken, one egg, and a splash of water. Blend briefly until the chicken is coarsely chopped.
- Add the grated carrot and garlic to the blender along with salt, black pepper, sugar, and a bit more water. Blend until the mixture is smooth and well combined.
-
Incorporate the Flours:
- Transfer the blended mixture to a mixing bowl. Gradually add the tapioca flour, stirring continuously to combine.
- Add the all-purpose flour, mixing until fully incorporated. Adjust the seasoning to taste.
-
Steam the Mixture:
- Prepare a steamer by adding a small amount of water to the bottom. Grease a baking dish or tray with a thin layer of butter.
- Pour the chicken mixture into the prepared dish. Steam for approximately 20 minutes or until firm and cooked through.
-
Cool and Slice:
- After steaming, allow the mixture to cool before removing it from the dish. Slice into nugget-sized pieces.
-
Prepare the Dipping Mixture:
- In a bowl, combine one tablespoon of all-purpose flour with one beaten egg and a little water. Season with salt and pepper to taste.
-
Coat the Nuggets:
- Place bread crumbs in a separate shallow dish. Dip each nugget piece into the dipping mixture, then coat thoroughly with bread crumbs.
-
Freeze for Crispiness:
- Arrange the breaded nuggets on a tray and place them in an airtight container. Freeze for a short while to firm up.
-
Fry the Nuggets:
- Heat oil in a deep pan over low to medium heat. Fry the nuggets until golden brown and crispy, turning them occasionally for even cooking.
