Instructions

  1. Prepare the Chicken:
    Start by washing the chicken breasts thoroughly under cold water. Chop the chicken into small, bite-sized pieces. In a small pan, add the chopped chicken and a pinch of salt. Pour in 2 to 3 tablespoons of water, and cook on medium heat for a few minutes until the chicken turns white. Once done, switch off the heat and drain any excess water from the chicken. Using a hammer or a heavy utensil, mash the chicken until it’s finely shredded. You can also use your hands to gently break down the pieces.

  2. Prepare the Fritter Batter:
    In a large bowl, combine the all-purpose flour (maida), the cooked and mashed chicken, and the beaten egg. Mix the ingredients well using a spatula to create a smooth batter. Next, add in the butter, milk, salt, red chili powder, and black pepper powder. Stir everything together until the batter is smooth and well combined.

  3. Heat the Oil:
    In a deep frying pan or kadai, heat enough oil for deep frying. To test if the oil is hot enough, drop a small ball of the batter into the oil. It should rise steadily to the surface if the oil is at the right temperature.

  4. Fry the Fritters:
    Once the oil is hot, take small spoonfuls of the batter and drop them gently into the oil. Make sure not to overcrowd the pan. Fry the fritters in batches, flipping them occasionally to ensure they cook evenly on all sides. Cook until they are golden brown and crispy, which should take about 5-7 minutes per batch.

  5. Serve:
    Remove the fritters from the oil and place them on a paper towel to drain excess oil. Serve the fritters hot with a side of Dhaniya Pudina Chutney (Coriander Mint Chutney) and a steaming cup of Masala Tea for the perfect evening snack.
