Chicken Fuyung Hai (Guaranteed Delicious)
Ingredients:
- 250 grams chicken, cut into small pieces
- 1 large carrot, grated
- 4 large eggs, beaten
- 1 stalk green onion, chopped
- 1/2 large onion, finely chopped
- 4 cloves shallots, finely chopped
- 3 cloves garlic, minced
- 1 large red chili pepper, sliced diagonally
- 1 teaspoon seasoning powder (optional)
- 1 tablespoon granulated sugar
- 1 teaspoon white pepper powder
- 2-3 teaspoons fine salt
- 1 tablespoon chili sauce
- 5 tablespoons tomato ketchup (preferably a less sour brand like ABC or Sasa)
- 1 tablespoon sweet soy sauce
- 2 tablespoons cornstarch
- 150-200 ml warm water
- 500 ml cooking oil (preferably Bimoli to prevent burning)
- 1 tablespoon butter

Prepare the Egg Mixture:
- In a large bowl, beat the eggs thoroughly. Add in the grated carrot, chopped onion, shallots, green onion, minced garlic, salt, a pinch of sugar, white pepper, and the chicken pieces (or shrimp if you prefer). Finally, stir in the cornstarch until well combined.

Fry the Fuyung Hai:
- Heat the cooking oil in a pan over medium heat. It’s important to use enough oil so that the fuyung hai can be deep-fried for a crispy texture and even cooking. Once the oil is hot, carefully pour in the egg mixture.
- Fry the mixture, flipping occasionally, until the fuyung hai is golden brown and crispy, as shown in the photo.

Prepare the Sauce:
- In a separate pan, heat a little oil and butter over medium heat. Add the finely chopped shallots, minced garlic, and onion. Sauté until they are fragrant and translucent.
- Pour in the warm water, then add the tomato ketchup, chili sauce, and sweet soy sauce. Season with salt and a bit of sugar to taste. You can also add seasoning powder if desired.
- Add the sliced red chili and adjust the flavor as needed. If the sauce needs thickening, dissolve 1 tablespoon of cornstarch in a little water and stir it into the sauce. Cook until the sauce has thickened to your liking.

Serve:
- Turn off the heat and transfer the sauce to a serving dish. You can either pour it over the fried fuyung hai or serve it on the side. Enjoy this delicious dish!
