Crispy Chicken Skin Recipe
Ingredients:
- 1/2 kg chicken skin
- 1/4 cup rice flour (I use Rose Brand)
- Spices for seasoning:
- 3 cloves garlic
- 1 tablespoon ground coriander
- Salt and seasoning to taste
- Oil for frying

Prepare the Chicken Skin: Begin by thoroughly washing the chicken skin and cutting it into pieces according to your preference. Set aside.

Prepare the Spice Mixture: Blend the garlic cloves into a fine paste and mix it with ground coriander, salt, and other seasoning in a bowl. Add this spice mixture to the cleaned chicken skin, ensuring each piece is well-coated. Let it marinate for a while. For best results, refrigerate the marinated skin to allow the flavors to meld.

Coat the Chicken Skin: In a separate bowl, place the rice flour and additional seasoning if desired. Coat each piece of marinated chicken skin with rice flour, pressing gently to ensure the flour adheres well to the skin.

Fry the Chicken Skin: Heat oil in a frying pan over medium heat. Before frying, gently pat the coated chicken skin with your hands to remove any excess flour, which helps prevent the flour from scattering in the oil.

Cook Until Crispy: Fry the chicken skin in the hot oil until it turns golden brown and crispy. Remove from the oil and drain on paper towels.
