Chinese Cabbage Salad Recipe

Cook Time: 2 minutes
Prep Time: 20 minutes
Total Time: 22 minutes

Description: This Chinese Cabbage Salad is an easy-to-make, flavor-packed dish that’s perfect for a quick lunch or a refreshing side. Inspired by a recipe featured on Paula Deen’s show, it combines fresh vegetables with crispy, toasted ramen noodles, making it a fun and satisfying dish. The crunch from the cabbage and toasted noodles, along with the tangy homemade dressing, creates a balance of flavors that everyone will enjoy. I use mushroom-flavored ramen noodles for the seasoning to keep it vegetarian-friendly, but feel free to customize it to your preference!

Instructions

  1. Preheat the Broiler
Start by preheating your broiler to high. This step will allow you to toast the ramen noodles and almonds quickly, adding a crispy texture to the salad.

  2. Prepare the Vegetables
Shred the cabbage if you’re using a whole head, or simply open a bag of coleslaw mix if you’re short on time. Place the cabbage (or coleslaw mix) in a large salad bowl. Add the chopped green onions for a touch of freshness and color.

  3. Toast the Noodles and Nuts
Break the ramen noodles into smaller pieces and spread them out on a broiler pan. Add the sliced almonds and sesame seeds to the same pan. Place the pan under the broiler and toast for about 2 minutes, keeping a close eye on it to prevent the sesame seeds from burning. The noodles and nuts should be golden brown and fragrant.

  4. Prepare the Dressing
In a glass jar with a lid, combine the oil, sugar, vinegar, salt, and the seasoning packet from the ramen noodles. Shake the jar vigorously until the sugar dissolves, and the ingredients are well combined. This dressing will provide a nice balance of sweet and tangy flavors.

  5. Toss the Salad
Pour the dressing over the cabbage and green onions in the salad bowl. Toss everything together well, ensuring the vegetables are coated with the tangy dressing.

  6. Add the Toasted Ingredients
Just before serving, add the toasted ramen noodles, almonds, sesame seeds, and fresh basil leaves (if using) to the salad. Toss again to distribute the crispy toppings throughout the salad.

  7. Serve and Enjoy
Serve immediately for the best crunch and freshness. This Chinese Cabbage Salad is perfect for a summer gathering, a light lunch, or as a side dish to complement a main meal.
