Ingredients:

For the Kachori Dough:

  • 2 cups All Purpose Flour (Maida)
  • 1/4 cup Ghee, melted
  • 1/4 teaspoon Ajwain (Carom seeds)
  • Salt, to taste
  • Oil, for deep frying

For the Matar Kachori Filling:

  • 2 cups Green peas (Matar)
  • 1 cup Sweet corn
  • 2 Green Chillies, finely chopped
  • 1 inch Ginger, grated
  • 2 teaspoons Fennel seeds (Saunf)
  • 1 teaspoon Garam masala powder
  • 1/2 teaspoon Chaat Masala powder
  • Small bunch Coriander (Dhania) Leaves, finely chopped
  • Salt, to taste

Preparation Time: 20 minutes

Cooking Time: 40 minutes

Instructions:

  1. Prepare the Dough:

    • In a large mixing bowl, combine the ingredients for the dough: all-purpose flour, ghee, ajwain, and salt.
    • Gradually add water to the mixture and knead it into a soft, smooth dough. Knead for 3 to 4 minutes until it becomes pliable.
    • Cover the dough and set it aside for 10 minutes to rest.
  2. Make the Filling:

    • In a food processor, combine the green peas, sweet corn, green chilies, grated ginger, fennel seeds, garam masala, chaat masala, and coriander leaves. Pulse into a coarse mixture.
    • Transfer the filling to a bowl, and adjust the salt and spices according to your taste.
  3. Shape the Kachoris:

    • Divide the dough into 12 to 15 equal portions and roll each portion into a 2-inch diameter circle.
    • Place a spoonful of the filling in the center of each circle.
    • Gather the edges of the dough to seal the filling and twist the dough to secure it tightly. You can either leave the kachori as a ball or gently roll it into a 3-inch diameter circle.
  4. Cooking Options:

    • Air Fryer: Preheat the air fryer to 180°C (350°F) for 15 minutes. Place the prepared kachoris in the air fryer basket and cook until golden brown and crisp on all sides.
    • Oven: Preheat the oven to 180°C (350°F). Arrange the kachoris on a baking sheet and bake until golden and crispy.
    • Deep Frying: Heat oil in a deep frying pan over low to medium heat. Fry the kachoris until they turn deep golden brown and crispy. Drain on absorbent paper.
  5. Serve:

    • Serve the crispy Corn Matar Kachoris with green chutney and date chutney as a snack or starter for dinner parties.
