Ingredients:
For the Kachori Dough:
- 2 cups All Purpose Flour (Maida)
- 1/4 cup Ghee, melted
- 1/4 teaspoon Ajwain (Carom seeds)
- Salt, to taste
- Oil, for deep frying
For the Matar Kachori Filling:
- 2 cups Green peas (Matar)
- 1 cup Sweet corn
- 2 Green Chillies, finely chopped
- 1 inch Ginger, grated
- 2 teaspoons Fennel seeds (Saunf)
- 1 teaspoon Garam masala powder
- 1/2 teaspoon Chaat Masala powder
- Small bunch Coriander (Dhania) Leaves, finely chopped
- Salt, to taste

Prepare the Dough:
- In a large mixing bowl, combine the ingredients for the dough: all-purpose flour, ghee, ajwain, and salt.
- Gradually add water to the mixture and knead it into a soft, smooth dough. Knead for 3 to 4 minutes until it becomes pliable.
- Cover the dough and set it aside for 10 minutes to rest.

- In a food processor, combine the green peas, sweet corn, green chilies, grated ginger, fennel seeds, garam masala, chaat masala, and coriander leaves. Pulse into a coarse mixture.
- Transfer the filling to a bowl, and adjust the salt and spices according to your taste.

- Divide the dough into 12 to 15 equal portions and roll each portion into a 2-inch diameter circle.
- Place a spoonful of the filling in the center of each circle.
