Bihun Telur Gulung: A Delightful Crispy Egg Roll with Vermicelli

Ingredients:

  • 2 large eggs
  • 50 grams of vermicelli (bihun)
  • A pinch of salt
  • A dash of seasoning (optional)
  • A pinch of ground black pepper
  • 4 tablespoons of water
  • Your choice of sauce for serving

Instructions:

  1. Prepare the Egg Mixture: In a bottle or mixing container, combine the eggs, salt, seasoning, ground black pepper, and water. Shake or whisk vigorously until the mixture is well blended and frothy.

  2. Soften the Vermicelli: Place the vermicelli in a bowl and pour over hot water. Allow it to soak until the noodles are soft, then drain and set aside.

  3. Heat the Oil: In a non-stick skillet or frying pan, heat a generous amount of oil over medium-high heat until it is thoroughly hot. The oil needs to be hot enough to create a crispy texture.

  4. Cook the Egg Roll: Pour a portion of the egg mixture into the hot oil, allowing it to spread evenly. Quickly add a portion of the softened vermicelli on top of the egg. Using a skewer or chopsticks, gently swirl and roll the egg and vermicelli mixture around the edges of the pan, creating a rolled, crispy layer. Continue rolling and cooking until the egg is golden brown and crispy on all sides.

  5. Repeat the Process: Repeat the process with the remaining egg mixture and vermicelli, adding more oil to the pan if necessary, until all the mixture is used up.
