Roti Goreng Isi Hati Sapi Bumbu Kecap (Fried Bread Filled with Beef Liver in Sweet Soy Sauce)

Ingredients

For the Fried Bread Dough:

  • 320 grams high-protein wheat flour
  • 4 grams instant yeast (Fermipan)
  • 25 grams granulated sugar
  • 180 milliliters warm milk
  • 40 grams margarine
  • 1 egg
  • 1 teaspoon salt

For the Filling:

  • 5 pieces of beef liver, cooked in sweet soy sauce
  • 1/2 carrot, chopped
  • 5 green beans, thinly sliced
  • 1/2 onion, chopped
  • 1/2 teaspoon beef bouillon powder (Royco sapi)
  • 1/2 teaspoon black pepper

For the Coating:

  • 1 egg, beaten
  • Sufficient amount of bread crumbs

Instructions

Filling Preparation:

  1. Heat a small amount of oil in a pan and sauté the chopped onion until it becomes translucent.
  2. Add the chopped carrot and green beans, followed by the beef liver.
  3. Season the mixture with beef bouillon powder and black pepper. Stir well and set aside to cool.

Dough Preparation:

  1. In a mixing bowl fitted with a dough hook, combine the flour, instant yeast, and granulated sugar. Mix briefly to combine.
  2. In a separate bowl, whisk together the warm milk and egg. Gradually add this mixture to the dry ingredients while kneading until the dough becomes smooth and elastic.
  3. Add the margarine and salt, and continue kneading until the dough is soft and elastic.
  4. Shape the dough into a ball, cover it with a clean cloth, and let it rest for 50 minutes or until it doubles in size.

Assembly:

  1. Punch down the dough to remove excess air. Divide the dough into portions, each weighing 40 grams.
  2. Roll out each portion with a rolling pin and place a spoonful of the filling in the center. Shape the dough into your desired form, ensuring the filling is well enclosed.
  3. Let the shaped dough rest for another 15 minutes.

Coating and Frying:

  1. Dip each filled dough piece into the beaten egg, then coat it with bread crumbs.
  2. Heat oil in a frying pan and fry the bread pieces until golden brown on each side.
  3. Remove from the oil and drain on paper towels to remove excess oil.
