Roti Goreng Isi Hati Sapi Bumbu Kecap (Fried Bread Filled with Beef Liver in Sweet Soy Sauce)
Ingredients
For the Fried Bread Dough:
- 320 grams high-protein wheat flour
- 4 grams instant yeast (Fermipan)
- 25 grams granulated sugar
- 180 milliliters warm milk
- 40 grams margarine
- 1 egg
- 1 teaspoon salt
For the Filling:
- 5 pieces of beef liver, cooked in sweet soy sauce
- 1/2 carrot, chopped
- 5 green beans, thinly sliced
- 1/2 onion, chopped
- 1/2 teaspoon beef bouillon powder (Royco sapi)
- 1/2 teaspoon black pepper
For the Coating:
- 1 egg, beaten
- Sufficient amount of bread crumbs
Instructions
Filling Preparation:
- Heat a small amount of oil in a pan and sauté the chopped onion until it becomes translucent.
- Add the chopped carrot and green beans, followed by the beef liver.
- Season the mixture with beef bouillon powder and black pepper. Stir well and set aside to cool.
Dough Preparation:
- In a mixing bowl fitted with a dough hook, combine the flour, instant yeast, and granulated sugar. Mix briefly to combine.
- In a separate bowl, whisk together the warm milk and egg. Gradually add this mixture to the dry ingredients while kneading until the dough becomes smooth and elastic.
- Add the margarine and salt, and continue kneading until the dough is soft and elastic.
- Shape the dough into a ball, cover it with a clean cloth, and let it rest for 50 minutes or until it doubles in size.
Assembly:
- Punch down the dough to remove excess air. Divide the dough into portions, each weighing 40 grams.
- Roll out each portion with a rolling pin and place a spoonful of the filling in the center. Shape the dough into your desired form, ensuring the filling is well enclosed.
- Let the shaped dough rest for another 15 minutes.
Coating and Frying:
- Dip each filled dough piece into the beaten egg, then coat it with bread crumbs.
- Heat oil in a frying pan and fry the bread pieces until golden brown on each side.
- Remove from the oil and drain on paper towels to remove excess oil.
