Instructions

Step 1: Prepare the Batter
To begin, separate the egg yolk from the white. In a bowl, whisk the egg yolk with a pinch of salt using an electric mixer until well combined. Slowly pour in the milk while continuing to whisk. Add the all-purpose flour and whisk until smooth. Set the batter aside, covering it with plastic wrap to keep it from drying out.

Step 2: Prepare the Caprese Filling
While the batter rests, wash and slice the tomatoes into 1/2 cm thick rounds. Pair the slices to match in size, as these will be layered to form the “sandwich.” Drain the mozzarella and slice it into rounds, making sure the thickness of the mozzarella slices matches that of the tomatoes.

Step 3: Assemble the Caprese Sandwiches
On a serving tray, arrange half of the tomato slices. Layer each with a slice of mozzarella, a pinch of oregano, and a fresh basil leaf. Top with the remaining slices of tomato to form mini Caprese sandwiches.
