Ingredients

Β½ thumb-sized piece of ginger Peeled and crushed
2 cloves garlic Minced
Salt To taste

2 bay leaves For flavor
1 block tempeh Sliced as desired
5 small tofu blocks Cut into smaller pieces
For Frying
Fried chicken flour mix (e.g., Sajiku) As needed
Celery leaves Thinly sliced
Water Just enough for the batter
Cooking oil For frying

Instructions

Step 1: Boil the Tofu and Tempeh

  1. In a medium-sized pot, add the crushed ginger, minced garlic, bay leaves, sugar, and salt to taste.
  2. Add enough water to cover the tempeh and tofu, then bring to a gentle boil.
  3. Place the tempeh and tofu in the boiling mixture. Let it cook until the water has reduced and the tofu and tempeh absorb the flavors, leaving a slight amount of liquid in the pot.
    • Tip: If you prefer less sweetness, you can reduce the amount of sugar.

Step 2: Prepare the Batter

  1. In a bowl, combine the fried chicken flour mix (such as Sajiku) with thinly sliced celery leaves.
  2. Gradually add water to the mixture, stirring until you get a batter that’s neither too thick nor too runny.
    • It should lightly coat the back of a spoon without dripping off immediately.

Step 3: Fry the Tempeh and Tofu

  1. Heat a generous amount of oil in a frying pan until it reaches the right temperature for frying.
  2. Dip the boiled tempeh and tofu into the prepared batter, ensuring each piece is evenly coated.
  3. Fry the tempeh and tofu in the hot oil until golden brown and crispy on all sides.
  4. Once cooked, transfer them to a paper towel-lined plate to drain any excess oil.

Step 4: Serve
